Yes and no. Depends on the model of 3750 and what exactly you consider back plane switching.
The original series 3750s using StackWise have a 32 Gbps backplane, and support a 32 Gbps stack bandwidth (which I believe is actually dual 8 Gbps ports, duplex). The original series 3750 puts everything from each stack member on the stack. So although you add overall backplane capacity as you add stack members, the stack ring will become a bottleneck.
The later series of 3750s, the E and X models, using StackWisePlus have a 100 plus Gbps backplane, and only put unicast traffic on the stack ring if they need to. Also, the receiving stack member removes the ring traffic, unlike the early StackWise implementation that the source stack member removes the traffic. So, for those, stacking could be considered to improve you backplane switching capacity (for the logical stack device) for unicast traffic.
