Why someone use c9500 instead of Nexus7k in data center

The comparison not like models, Cat 9500 you can compare with similar models Nexus 9000 ( Nexus 7000 is Modular switch like Cat 9600)

Nexus Pure designed for the DC Server form environment.

Catalyst most of them designed for Enterprise LAN.

But business does mix, again it's all their own choice and comfort.

Personally, I use Nexus in DC, Catalyst in Enterprise Lan.

You need to compare the features: what you looking DC Switches more of switching. ( again there is mixed deployment seen where the requirement is different, Like FCoE / vPC / FEX - in nexus, you can see)

As others have already noted, likely such a choice might be due to price and/or features.  Possibly another reason would be support staff used to supporting Catalysts vs. Nexus (they are a bit different).

Remember, once upon a time, before there was the Nexus line, Catalysts were often used in the datacenter.  (NB: with something like the 6500 series, building a 6500 sometimes required a good understanding of the differences between supervisors, line cards [including optional line card modules], and support modules.  Nexus series don't usually offer such a vast selection of such to choose between, well other than all the different Nexus series.)  Besides feature differences, Nexus platforms, for their size, often offer more ports and/or overall bandwidth capacity within the switch.

The link explains a lot detail, but it does not mention: Nexus9K support vPC, while C9K support VSS, not vPC, right?
