Could you please share or advise where I can find some basic documents to start with FCoE?
Here are some of the good references which can be used as starting point for FCoE.

I was wondering if you could briefly discuss some of the enhancements/caveats in regards to the whole FC vs FCoE camps. My understanding is that with the advancements in DCB and Ethernet technology, along with the "lossless ethernet fabric", FC will quickly run out of steam over the next few years. And now with the move to 40GbE this should occur rather quickly. What are your thoughts?
This is a really broad question and the response should not be generalized.
There are still a lot of deployments which use FC and FCoE. Also our new Data Center Switches like nexus 6k, 7k are supporting a mixture of FC and FCoE. So even thought it might look like FC or FCoE might not stay longer they will still stay in the market for sure for few more years atleast.
Can i also ask about Nexus 7000? if i can't, then can you show me the relevant "ask the expert" to me?
