Is it possible to use x3 N5k's instead of x2 as per Cisco design guides.

Not sure I understand what you're trying to do here as there's very little information as to how you're trying to connect things.
What you have shown is a dotted line between the three Nexus 5k. If you're thinking of doing anything with vPC, then three devices is not supported. There can only be two devices form a vPC domain.
Why do you want three N5k?

Hi
We will have about 12 to 14 2248's that will be dual homed and was wondering if we could split them over x3 5532's instead of two. But I think you have answered this.

Hi,
Definitely not. The FEX can only be straight-through (single attached) to one N5K or dual-homed to a pair of N5K configured in a vPC domain.
If you think of the FEX as the remote line card of a switch, single attached is like a switch with a single supervisor, and dual-homed is like connecting to a switch with dual supervisor. There's no concept of three supervisors in a switch
