In the SD-Access "DNA Center" when used embedded wireless controller in the Catalyst 9300/9500
I would like to know compared to the traditional network
the EWC(9800 software running on a Catalyst 9300/9400/9500) is working in local switching or Central switching mode

Within SD-Access AP deployment model is "Fabric".

So all User Data will be switched locally. CAPWAP Tunnel will only being used for Control Traffic.
User traffic will be forwarded through a VXLAN Tunnel to the Fabric Edge Switch wich handles further forwarding within the fabric.
Maybe you want to have a look at Cisco Live! Session BRKEWN-2020 and BRKCRS-3810. They will show how Fabric Operation for Fabric Enabled Wireless will work..

@Benjamin-A if i understand correctly in the Fabric SD-Access when enabled EWC in switch C9300 and AP is support only on mode Local not support Flexconnect ..!

In Fabric Mode.
You have to differenciate between Local, FlexConnect and Fabric Mode.
EWC on C9K will only support Fabric Mode as you can see from previous Guide.
