what are the main differences between 2960G and 3560G switches?

There are many differences and the main one being 2960G is Layer2 Switch while 3560G is a Layer2 and Layer3 Switch.
With a 3560G, you can create multiple Vlans in your network and route between them without the need for an external router.

Edison, thanks for the quick reply. Is the management pretty much the same? And will the 3560 be more beneficial security wise?

Management is mostly done from the command line and it uses Cisco IOS. The beauty of Cisco IOS is pretty similar interface across all platforms. From high-end routers to low-end switches.
3560 provides more features but you be the judge and compare:
