Does the 3850 with 10 Gig ports use Cut-through or Store-and-Forward?

If it does use one or the other, can it be changed?

What is the command to check what is using?

The 3850 uses Store-and-Forward switching method. You couldn't change the method in 3850.

You can change switching method in switches that use cut-through switching like Nexus 5000 series with below command in global configuration mode.

hardware ethernet store-and-fwd-switching
