An acceptance test plan could be a small or it could be a detailed one covering almost all the features that you can run in your network. It would be very difficult for any one to give you a detailed test plan. You need to evaluate what feature sets you are running in your network, what are the most important ones and then document all that. I can help you with a generic document to give you an idea related to Nexus7k testing but you need to change it to your test plan for 7600.
