Hi I have several Cisco Catalyst switches 3560 / 3750 etc. There is a connector for remote PSU in the back. Is this an input for redundant power? Where can I find the pin layout?

Sounds like you've found the connector for an external RPS.  I don't know if Cisco documents the pins, and the RPS might "talk" with switch, so more might be involved they providing some voltage on those pins.
