We have the core switches which are connected in the stack and I want each core switch to be the root bridge for each Vlan. Can we do that using the PVST and still the core switch will be in stack?

stack meaning one control plane so you can not config each SW in stack to be root for different VLAN.

My requirement was that the user data traffic should flow through the core switch 1 and the camera traffic should flow through the core switch 2. How can I achieve this?

Possibly by making the left core the root switch for user VLANs and the right core root for camera VLANs.

Yes, with PVST, root switches can be different for each VLAN.
