Hi All,
Is it possible to have etherchannel across 2 switches? As an example, having a server with 2 ports connect, 1 port to Switch-A and the other to Switch-B and then use those two links on the sepatate switches but to the same server to form an Etherchannel.
The Switch-A and Switch-B are 3560 series
Any thoughts and or comments much appreciated.

Unfortunately not with 3560 switches. The etherchannel cannot be spread across both chassis. To be able to have an etherchannel across 2 chassis you need either -
1) 3750 switch stack
2) 6500 VSS
3) Nexus VPC
with all other switches the restriction is all etherchannel ports must be on the same switch.
