Dears,
I have an existing network with one core switch catalyst 6513 with two supervisor engines, how I can add the redundant core switch with minimum downtime.

before we give right suggestion or advice - what kind of design, you looking to implement.
1. VSS or just another standaone ?
2. is the new kit has same modules as old one which is in production ?
based on the design you looking :
VSS :
if standalone mode :
1. Layer 2 or Layer 3
- just build the configuration the same as the old one with a new IP management IP address.
- enable LAG / Port-channel between these 2 core to pass the VLAN if this Layer 2
- if not make point to point interface with required IGP to exchange routes.

What if I want to make HSRP between both core switches, can you give me a plan need to discuss it with my manager.

Uhhhhh ... what?
If you need to discuss HSRP with your manager then I would recommend hiring a reputable systems integrator to do the work.

If you do not want to make Logically 1 as VSS.
You can extend Layer2 between 2 switches, create a HSRP config.
again depends on how your existing g access switches are connected.
