Today, a switch installed just 1 month ago, had a big issue, i couln't see any mac address in any ports, i checked the cofiguration, logs, everything but nothing.
we made a test moving one of the affected server to another switch with the same config, and it worked perfectly.
The solution was reboot the switch.
Switch Catalyst 9300 ios xe 16.9.3
Please anyone could help me with this?

Hard to tell what could be the issue as there is no logs and switch was rebooted. It is possibly a software bug in the version of IOS you are running. Open a ticket with TAC and have them investigate the issue.
