How would you implement redundancy on the switches in this scenario? Is vPC the only way? Any other way this can be done with 2960x and 9000 series switches?

Assuming you have 2 Layer 3 switches performing routing and 4 Layer 2 switches, you could use a First Hop Redundancy Protocol (such as HSRP, VRRP, or GLBP) to allow a path out of the network Northbound (not shown in your picture) should one of the Layer 3 switches fail. According to the Cisco Feature Navigator, the Catalyst 9000 series switches are able to use this feature and could serve as your Layer 3 switches with your 2960X's acting as your access layer switches

9000 is Catalyst or Nexus ? if nexus i go with vPC
if catalyst i go with Layer3 with IGP (OSPF preferred) with uplink switch.
Note : as per diagram above switches are not connected each other ? is this what you looking to deploy as isolated CORE / distribution swiches ?
is this enterprise LAN or DC ?
