is it possible just trust DSCP on each of trunk interface and the access port that connects with a cisco phone/pc/wlc/ip_camera?

Basically yes you can just trust the dscp on the trunks & interfaces.

However the whole point of trusting is related to QOS.

If you are trusting the dscp I expect you want to provide some kind of prority for voip & video.
