You can log traffic that hits an access-list that denies the traffic, that traffic is in itself headed for dev/null
but as far as I know there is no way to log all traffic that is sent to /dev/null in itself.
I do not even think you are allowed to se/address the dev/null in either ASA or IOS for switches.
