Unfortunately NAT is not supported on the 3560 switch. This is typically done on a router or firewall. Although the 3560 is a layer 3 switch it does not perform all layer three functions. I don't think NAT will ever be supported on this platform.
Just to add to Mark's post, NAT is only supported on the 6500 switch. All other switches that you can now purchase do not support it.
