Hello ,
it should be possible the most used resource is disk. If only few devices are to be logged (be aware that firewalls are very verbose in their logs)
the syslog messages are sent inside UDP packets. (no retransmission)
You may need to tune QoS to provide BW for this type of traffic
if you think to send the packets over the internet I would suggest to use a pair of devices to build an ipsec tunnel for privacy.
