I have a facility in Mexico that has limited WAN bandwidth. In order to speed up connectivity to a server located in another facility, I setup a VPN connection between the two sights, and created static routes on a layer 3 switch so the traffic from Mexico to the server goes across the VPN connection. How do I move the traffic from that server to the network in Mexico? All other traffic from that sight to Mexico needs to go across the WAN connection.

You can configure Policy Based Routing on the current gateway router.

You need to match the source (the server) and destination (Mexico network) - if there is a match, set the next hop to the VPN connection.
