Where can I find the documentation the describes how to convert a 7985 (T150) from a SCCP load to either an H.323 or (if available?) a SIP load so I can register it to my VCS-C/E instead of just CUCM.

You would've been able to do that with just about any other TANDBERG system, but the 7985 (T150) doesn't fall into that category - unless things have changed now that TANDBERG is Cisco see:

This unit is Tandberg branded/badged, not Cisco.

Don't know - guess best bet would be to either contact your Cisco rep or open a case with TAC and see if you can get a key for it.

Anyhow it would require a valid license key like Jens mentioned.
It might be better then nothing in a lab enviroment, but to be honest, do you really want to use it?
JabberVideo will give you a better quality.
Getting some E20 as long as they are available might be a good idea as well :-)
