Essentially this is going from a voicemail-only configuration to a Unified Messaging configuration. So, yes it is absolutely do-able. I've done it a number of times. The key is that you can use the COBRAS Data Viewer tool to map old alias to new alias and you need to create the subscribers on the new system BEFORE you import them via COBRAS.
