From my experience, yes you can disable NNTP service on the Unity server once you've installed Unity. This is also referenced in this Cisco guide (search for NNTP) - http://www.cisco.com/en/US/customer/docs/voice_ip_comm/unity/5x/security/guide/ex/5xcusec010e.html. CUSPA checks to see if it is installed. I don't know if the service is disabled if that impacts future Unity upgrades ... although it would just be a matter of enabling the service during the upgrade and disabling again afterwards.
