Is there any recommendation of rollback when migrating cisco collaboration platform such as CUCM IMP and CUC or UCCX?
I am thinking about "taking a snapshot for all VMs" before the migration.

AFAIK snapshots are not a recommend solution.
Take the backup. In worst scenario you can restore the backup.

@Nithin Eluvathingal It's a migration from 11.5 to 12.5 for CUCM IMP CUC and UCCX.

As it's a migration it would mean that you install a new system and move users and services over to it. As such there would be no need to do any snapshots or anything as the source system would be left intact. Or are you meaning something all together differently?
and btw @Nithin Eluvathingal is absolutely correct, snapshots are not supported by any Cisco UC systems. Your best off if you set the VMs to not even allow for any snapshots to be created. For more details on this please see this link.

As @Roger Kallberg mentioned, isolate and build a new cluster from old cluster backups and once ready move the service and users to new cluster.. Since its a migrations, for CUCM and IM i will prefer to go with PCD. CUC and UCCX cannot be migrated using PCD.
Note:- Migrations to same version using PCD is not supported.

You have grace period of 90 days to fix the license.

You can do the migrations and licensing part comes after the migrations. 90 Days grace period will be available for you to complete the licensing.
I always recommend to do the license conversion prior to migrations. From 12.X the license is smart.
You can place the upgrade license trough MCE portal and within two days you will get the license and upgrade files.
Second option is, you can contact Cisco licensing TAC to get the upgrade license. Licensing ticket can be open from below link.
