I know it's not best practice, but I can't find anything in the Cisco Documentation to say absolutely no. We have a Win 2K Unity 4.0(4) server with on box Exchange 2K and are reaching the recommended user limits. We've read the Upgrade and Reconfiguration Guide about taking Exchange off box and it scares us a lot. Can we add another Exchange 2K server as a mailstore without moving Unity?

yes, you can add a second unity exchange message store.
you will not have to move your current exchange message store but you will have to setup the new store in the appropriate AD location.
