We only use Unity Connection 8.5.
When I go into the CUPC client I see a red X for the old Unity voicmail (Connection shows green).
How do I prevent CUPC 8.5 from showing a red x for something we don't use in our environment? This has end users thinking something is wrong when it's not.

There's actually two fixes for this depending how you want to do it. So do one of the following:
1) Point the voicemail server to Unity Connection but use port 80 instead of 443.
2) In the voicmeail profile itself, simply set the voicemail server to "None". This would only leave the mailstore configured. This way it doesn't even show up.
