Take a look on this doc, it says where the Jabber logs are stored (XP, Windows 7, Vista)

You have to manually delete, on the Jabber Windows Admin Guide there is no info if its possible to disable the logs

On the CUP server under Messaging > Settings there is a checkbox labeled "Allow clients to log instant message history (on supported clients only)". Assuming Jabber will respect this it'll be what you want. The more general disclaimer here is that this is not an XMPP protocol feature but a Cisco client feature. If the user connects using another XMPP client such as Pidgin they will be able to log IMs.
