UCS to UCS upgrade

Well everyone we are coming to a crossroads where the UCS C-Series M2 servers we've come to love are going EOL.  How is everyone migrating (Virtual) Voice environments to new hardware?

If you have vCenter, depending on the app, you can do a live vMotion, or have to shutdown the VM and then move it.

If no vCenter, shut the VMs, then you can manually move the files from one server to another, register them and start the VMs in the new server.

I concur vMotion is the way to do it as it's very quick, alternatively VMware converter is another great tool that moves VMs between ESXi hosts relatively quickly.  I've only used it in the lab and don't think it's officially supported by Cisco, but it does work.
