We're running virtualized UC 9.x cluster (1 primary 1 secondary) and we want to add vCPUs and I've been asked if the vCPUs are discrete or core? I am completly unfamilar with virtualized servers (someone else created the VMs). I do know we're using VMware. I also beleive we are not using Cisco blades for these two VMs.

EDIT: As this is CUC and explained in the 2nd link, such is not supported.
You need to DRS your VM, build the new VM with the vCPUS you need, then restore.

what is the difference between discrete vs. core CPUs?

Not sure what they mean by that, most likely it's physical vs logical cores, review the docs.
