could you confirm whether or not Cisco Unity connection version 11.5 supports a speech view integration with Office 365?

if so could you point me in the right direction?

I don't think so, the related bug is still open for enhancement. Please find the details of the bug as below;

I checked the release note for release 12 and not mentioned about it. I advise you to contact a Cisco to have better clarity on the roadmap of the same.

That enhancement request is referencing the admittedly complicated SMTP routing for stt-service. If you can figure out how to get return SMTP through your mail infrastructure it will probably work; certainly CUC has permission to modify the message body. Worst case is you could configure CUC to hold the SIB message until the transcription completes.
