So I get where the Unity uses schedules to change from a standard to a closed greeting ( or holiday). How best to handles caller input if the menu options for the off hours are different that the on hours? It seems if I select closed and edit caller input, it also changes the standard menu?

You can set the after-greeting action to go to another CH with a different set of caller input options.
