I am looking for suggestions on how to implement the following:
When employee leaves a company, that DN ( CUCM ), will get forwarded to Unity Connection to play a rerecorded message indicating such and then forward this caller to the receptionist.
Thanks in advance. I am searching for the documentation that would describe the configuration of this solution in Unity Connection.

Here is how I would do it.
Create a CTI Route point on CUCM with an extension, lets say 5000, set the extension to forward all calls to voicemail
Delete the phone and extension of the former employee's phone
Add translation pattern with extension that belonged to the employee and translate it to 5000
On UCXN build a call handler with DN 5000 that plays the greeting and transfers the call to the receptionist extension after the greeting.

Hi John,
I wanted to add an alternative method to the great tips from Chris (+5 "C")
I would create a new Call Handler @ 5000 and on whatever greeting you
use for the recorded message make the "After Greeting Action" route to
reception.
Then in CUCM create a new Voicemail Profile called something like employee_transfer
and under the "Voicemail box mask" enter 5000.
Whenever an employee leaves you can go to their phone/DN config in CUCM
and Call Forward All to VM (checkbox) and change the Voicemail Profile to
employee_transfer delete their mailbox and you're good to go. When someone
new starts you can create a new voicemail account, change the VM profile back and
they are ready to rock
