We are setting up a test pair of of 6120's and are trying to get the uplinks going. We are only doing a single uplink from each fabric interconnect.
So fabric interconnect 1 goes to 5k-1 and fabric interconnect 2 goes to 5k-2.
Since we are only doing 1 uplink per 6120, do we still need to do a port channel?
We are not sure if we are supposed to build a port channel if we are only using a single uplink on each 6120.

Are you doing virtual port channeling with the 5Ks? Standard port channels only involve more than one uplink per switch but vPC each uplink from the 6120 could be in the same vPC.

As I know, Nexus 5000 does not support vPC by itself.

For vPC you need 2 N5Ks connected directly together over 2 10G ports for the vPC peer-link. If you only have 1 10G uplink per 6120 then you will not be able to do a vPC from your 6120s.
For vPC you need at least 2 uplinks per 6120; 1 going to N5K-1 and 1 going to N5K-2. A vPC could then be created across the 2 N5Ks. The 6120 would see it as a regular LACP port channel.
