We have UCS C210 M2 in which, when we try to access the Storage tab on the Inventory link, it shows up empty - or blank. Has anyone run into this issue and possibly know how to fix?

Greetings.
In the CIMC, admin tab, utilities, try rebooting the CIMC
Once it logs back in you can check if it has re scanned storage controller.
You can also try a complete power cycle after that if it has not re inventoried storage.
You may want to make sure you are running the latest firmware , and make sure you apply 'all' during firmware upgrade.
I have seen a few cases where a failing device (i.e. raid controller BBU) causes the storageD process running in the CIMC to timeout, and no storage related inventory shows up.
During post time, check to see if the MegaRaid option rom has any alerts.

Btw.. will rebooting CIMC impact the host VMs in any way?

Rebooting the CIMC controller does not reboot the server.
The guestVms are not even aware of the CIMC.
