it all depends on RAM available in the device.
As per my understanding each NAT entry requires about 160 bytes of memory, the number of translations possible is limited by the amount of memory available on the router.

As long the switch not rebooted it still hold the old version.
if any circumstance the switch reboot it will load the new one (you downgraded version will take effective).
What procedure you followed to downgrade, just copied image and change the boot variables ?

Can you define what is basic template, every organisation have different templates based on the requirement,
As per Cisco basic template means, management IP and local security(like snmp, username, console access).
If your enterprise already have basic template, why not we use the same template compare with new router syntax and build one.

What kind of Switch you have ? you can use Wireshark to capture the traffic.
