Hi
i have to change the power supply of cisco BE 6000 where my CUCM is installed
how can i stop cucm correctly

I think the best way to do that it's through CLI command utils system shutdown. This way you're requesting CUCM to shutdown the system gracefully. I had a customer who ran CUCM in a VMWare environment and he was shutting down VM directly, corrupting the file system in /common mount point.
