I was able to turn DHCP off to give a demo to a customer now how do I turn it back on?

In CCA, go to Configure > Routing > DHCP Server to create a new scope. Assuming you are using the UC500 for data and voice you will need a voice and data scope. You will also want to configure a range of exclusions for each scope - usually at least the first 10 addresses.
