Hello,

We have a few 7960, 7975 and SPA525G phones, we would like to start doing video calls internally. Could we get some tips on the cameras to use such as recommendations for the cameras, etc, etc a

From the list of phones you mention, only the SPA525G supports a native video player. Here is the configuration note on how to enable the MonitorView feature. Notice that CCA 2.2.2 now includes a Video Setup Wizard that allows you to activate this feature with just a few clicks. I will be updating the config note soon to reflect these changes:

Remember that point to point video telephony us possible on all Cisco 79xx IP phones (not the SPA5xx at this time).  This is accomplished usint the CUVA camera connected to the PC, which is connected to the switchport of the phone, or, on the PC running CIPC (soft phone) which is in turn plugged into the UC500.

Cisco Unified Video Advantage (the whole licensed offering) is not required, only the CAM and the drivers, which you can get from CCO.

Here is a not on that...

Video Monitoring, on the other hand, is as Marcos says, available on SPA525G onlt and here is a note to configure it with the CCA 2.2.2 wizard:
