We have several SPA 504G Cisco phones, a few days ago I upgraded them all to software version 7.5.7s since then users are complaining that when they answer a call there is a small delay before speech is setup. Has anybody else experienced this is it possible to downgrade them to an earlier version say 7.5.3

So many possible causes for delay. Turn on syslog&debug (highest level) and catch them. Capture SIP and RTP packets for affected call and analyze them. Disclose current configuration.
But as a blind fire - if you are using TLS then the TLS is the answer.
