Dial An Extension in Auto Attendant at Any Time

How do we set it up so we can dial extensions in the Auto Attendant at any time? Right now we've got a press 1 for so-and-so, but we have three pages of that and every-time someone leaves or is hired we have to re-record things. If we do extensions we can just have a "dial the extension you want" message and it would be much quicker for those calling in. If possible we don't want to dial anything other than the extension (no # after or anything).
