Update,
On windows Anyconnect this is not an issue, as it accepted the wildcard cert without any issue. On the other hand, Mac's running Catalina had an issue, and I had to uninstall and even remove the entire /opt/cisco directory and contents and re-install. It seems as it caches the original cert.
