It would be possible to create 2 IPSec tunnels between 2 devices you would just need separate interfaces with different addresses on both the router and the firewall.

Just create 2 separate connection profiles on each device and apply them to the corresponding interfaces.

No, above is not possible on ASA. You could have only 1 static tunnel configured per peer IP.

Yes it is possible. Your crypto ACLs or routing will determine which
traffic goes over which tunnel
