I don't want to delete the config if I don't have to. What is the procedure to disable
a VPN?

Let me word this differently
I currently have (3) VPN's setup. I want to be able to disable (1) of the VPN's, not all.
Does anyone know the exact steps to follow to accomplish this task?

Hi,
Can you tell us what type of VPNs we are talking about?
Are all 3 VPNs for example L2L VPN / Site to Site VPNs? Or are they perhaps VPN Client connections? Or mix of both?
What type of VPN is the one that needs to be disabled?

There's no procedure per se to disable a single site-site VPN while leaving the others functional.
You could, however, easily remove or change any one of several one key lines in your configuration to make a single site-site VPN non-functional.
For instance change the peer address to something invalid, change the Pre-sahred Key value to something incorrect, put a static route for the valid peer address to an incorrect gateway - these are but a few off the top of my head.
