Use Loopback0 as the ip unnumbered interface on both ends to establish a tunnel, you may need to define the tunnel source on the Hub's tunnel template aswell.
If you peer the tunnels using the physical interface (Eth0/0) you will find that you can route traffic from the spoke over the Tunnel0 interface (if you create a static route), but on the hub when using a DVTI as the interface is dynamically created you cannot specify a destination. Normally you'd use loopbacks when using DVTI and then run a routing protocol, forming an adjacency between the loopbacks - routing the traffic over the encrypted tunnel.
