Hi, I'm looking to deploy GETVPN to a number of sites. I've done some testing in the lab but can't seem to find a command (yet!) that shows hits when traffic matches the access-list that is downloaded from the KS. Is there one?

There is no GETVPN ACL hit counter currently. A 'show crypto ipsec sa' will show you how much traffic was being sent.
