hey,
Cisco routers now come with SDM (Security Device Manager), using which you can configure the routers.
You can configure GRE over IPSec using this tool.

if you have a registered cco access there are sample configurations on link http://www.cisco.com/cgi-bin/Support/browse/psp_view.pl?p=Technologies:GRE&s=Implementation_and_Configuration#Samples_and_Tips
but the basic idea is after you built the crypto map, apply it to the tunnel interface too.
