I am trying to setup a PIX 501 so that it will connect to two EZvpn servers conncurently. Is this possible, and if so, how do I do this? If it is not possible on a 501, what devices is it possible on?(506/e, ASA, router, etc?)

You can't connect to 2 ezvpn remote server concurrently, it is not supported on any platform.
If you would like to have 2 VPN tunnels at the same time, just configure LAN-to-LAN VPN.
