By utilizing the USB cable with your iOS device, a packet capture of the radio interface is possible.  This method will collect all frames in and out of the radio driver, effectively providing the same functionality as running Wireshark locally on a client PC (or airportd on MacOS).

Using Windows:

Using Apple MacOS:

The Apple link details packet capture procedures for MacOS itself, as well for tethered iOS devices (scroll down)

If you have an AppleCare Enterprise support contract, Apple also has profiles that can be used with the desktop configuration utility to collect the pcaps in addition to the iDevice console logs.
