Does anyone has step by step instructions on how one can capture traffic from a Cisco wireless phone using a laptop and wireshark?

You need to have a spare AP to convert into Sniffer mode. Then you can use it to capture wireless from anywhere.
Once you convert into sniffer mode, it will not service any clients, simply sniff wireless over the air.

Easiest way is to use Cisco AP in "sniffer" mode & set it to channel used by Cisco phone & keep closer to it and start capturing.

much appreciated your quick response....
but once I change APs in sniffer mode, would this AP will be working as usual? I need to do this in production so I don't want to create more issues. Thanks
