Downgrade to 17.3.4 and try again.

I've changed it to 17.3.4 and the result is the same the iphone 12 pro or ipad pro m1 connect to 802.11ac protocol

What is the objective of this exercise?  Is it to prove the wireless clients able to "hit" 802.11ax speed or to connect only to 802.11ax protocol?

To connect wifi 6 802.11ax protocol

because hardware ap and client is capable to run wifi 6 protocol

thanks you for you reply

Not sure why the AP is detecting the wireless client to only support 802.11ac.

I am not really familiar with eWLC but have a look at this guide (Configuring 11AX) and see this helps.

That could be one of two issues, or this is a cosmethic issue on the IOS-XE software (I've found that with certain codes COS-APs shows 2 spatial strrams clients connecting with 2 streams but using MCS Index for 1ss in the WLC CSCvx54426) or this is a defect on the M1 side as it happened on early stages with driver firmware and some 802.11 features on MacBooks.

update

I tested with client samsung s20 it show 80.211ax protocol with c9120ax 17.6.1 EWLC

in my opinion there are two possible incompatibility of ipad m1 driver and cisco 9120 software
