Are Cisco 9120 AX APs compatible with Cisco 3750x switches?

Are you talking as using that switch model to power the AP? or just provide network access. or as a controller to manage the AP?
Network access it will support it (although limited to 1G so not to provide mGIG speeds)
As for POE it really depends on the model of 3750x - it will need to provide 802.3at power (POE+) to support all radios on the AP.
If your talking of using the 3750x as a converged access controller to manage the AP then the answer is no

The model is WS-C3750X-48P-L. Using the switch as network access, APs would be managed by 9800 WLC.
These switches look like they provide 802.3at power (POE+).

9120 AP's support POE+ and mGig on it's ethernet port. So if you use 3750X
- make sure 3750X is POE+ capable and have enough POE budget to accommodate the new AP's. You need to consider 25.5W per AP.
- You will not be able to use mGig capable uplink of the AP, rather AP will auto negotiate to 1Gbps. This is more than sufficient to cover even the complex use cases of enterprise world as of today.

If you feel that POE budget is not sufficient then consider bringing in POE injectors for the AP's. Make sure they are POE+ capable and then disable POE negotiation on the switchport.
Please consider upgrading your switches to latest Catalyst 9000 series switches ASAP as 3750X is EOL. Recommended replacement will be Catalyst 9300 and you have multiple flavors of 9300 to choose from depending on the POE/mGig support required. Also you have the option to choose uplink module if you are going with 9300 or fixed uplink modules are there in 9300L. Speak to you Cisco Advisor for more insghts.
